When River North Brewery founder Matt Hess first discovered amburana wood, he immediately wanted to use it in a recipe. The wood, which comes from trees native to South America, provides a unique profile with spicy notes of cinnamon. Hess thought it would go well with some of the higher alcohol beers.

After receiving samples of amburana, Hess’s team made an aged royal vessel from amburana vessels. Turns out River North has decided to enter a beer in the 2023 Great American Beer Festival.

However, the Brewers Association, which organized the event, rejected those plans.
